Lemon chicken and rice
Ingredients/Components
- cooked chicken, cut into strips - 1 lb
- medium onion, diced - 1 item
- margarine - 2 Tbsp
- can chicken broth - 1 item
- Minute rice
- large carrot, sliced - 1 item
- salt - 1/2 tsp
- snow pea pods - 1 c
- parsley - 3 Tbsp
- cornstarch - 1 Tbsp
- lemon juice - 2 Tbsp
How to make lemon chicken and rice:
Saute chicken and onion in butter until chicken is lightly browned, about 5 minutes. Stir in cornstarch, cook 1 minute. Add broth, carrots, lemon juice and salt; bring to a full boil. Stir in pea pods, parsley and rice. Cover and let stand 5 minutes. Fluff with fork. Cooking time: 25 minutes. Yields 4 servings.Recipe categories: Lunch/snacks, Main dish, One Dish meal.
