Ingredients/Components

  • salt - 1/2 tsp
  • brown sugar
  • cornstarch - 1/2 c
  • water - 1/4 c
  • lemon juice - 1/2 c
  • honey - 3 Tbsp
  • ground ginger - 1 tsp
  • pepper - 1/8 tsp
  • green onions, sliced - 4 item
  • whole chicken breasts - 4 item
  • egg yolks, slightly beaten - 4 item
  • chicken stock - 2 tsp

How to make lemon chicken:

Lemon Sauce:1 1/2 c. water1/2 c. lemon juice3 1/2 Tbsp. brown sugar3 Tbsp. cornstarch3 Tbsp. honey2 tsp. chicken stock1 tsp. ground ginger Remove and discard chicken skin. Cut breasts in half. Remove and discard bones. Pound with mallet or rolling pin to flatten slightly. Combine cornstarch, salt and pepper in small bowl. Gradually blend in water and egg yolks. Heat oil in work or large skillet over high heat. Dip breasts, one at a time, into cornstarch-egg yolk mixture. Cook breasts, 2 at a time, until golden, about 5 minutes. Drain on paper towels and keep warm while cooking rest of chicken.

For sauce: Combine all ingredients in medium saucepan and mix well. Cook over medium heat, stirring constantly, until sauce thickens (about 5 minutes). Pour over chicken. Sprinkle with green onions.
