Lemon chicken
Ingredients/Components
- salt - 1/2 tsp
- butter - 2 Tbsp
- cornstarch - 1 Tbsp
- lemon juice - 2 Tbsp
- grated lemon rind - 1/2 tsp
- can chicken broth - 1 3/4
- chopped parsley - 3 Tbsp
- medium onion, chopped - 1 item
- cloves garlic, chopped - 2 item
- large carrot, sliced - 1 item
- dry Minute rice
- skinned, boned chicken breasts, cut into strips - 1 lb
- snow pea pods - 1 c
How to make lemon chicken:
Saute chicken, onion and garlic in butter until chicken is lightly browned, about 5 minutes. Stir in cornstarch and cook 1 minute. Add broth, carrot, lemon juice, rind and salt. Bring to a full boil. Stir in pea pods, parsley and rice. Cover and remove from heat; let stand 5 minutes. Fluff with a fork. Makes 4 servings.Microwave: Reduce butter to 1 tablespoon. Combine chicken, onion, garlic and butter in 2 1/2-quart dish. Cover and cook at High for 3 to 4 minutes, stirring once. Blend cornstarch with broth and add with remaining items to chicken mix. Cover and cook 7 minutes. Stir twice. Fluff with fork.
