  • sugar - 2 c
  • eggs - 4 item
  • milk - 1/4 c
  • flour - 1 Tbsp
  • butter - 1/4 c
  • lemon juice - 1/4 c
  • lemon rind - 4 tsp
  • corn meal - 1 Tbsp
  • 9-inch pie pastry

How to make lemon chess pie:

Line a 9-inch pie pan with pastry. Put in a large bowl sugar, flour and corn meal. Toss lightly with a fork. Add eggs (unbeaten), butter (melted), milk and lemon rind and juice. Beat with mixer until smooth and blended well. Pour into pie shell. Bake at 375° for 35 to 45 minutes or until top is golden brown. Cut warm.
