Lemon cheesecake
Ingredients/Components
- sugar
- vanilla - 1 Tbsp
- pkg - 1 oz
- boiling water - 1 c
- lemon juice - 1/2 c
- melted oleo - 1/2 c
- lemon jello
- graham crackers - 1/2 lb
- tall can evaporated milk, chilled in freezer until mushy - 1 item
How to make lemon cheesecake:
Crumble crackers; save out 3 tablespoons and combine remaining with melted oleo. Press into bottom of a 13 x 9 x 2-inch pan and chill. Dissolve jello in boiling water. Add cream cheese and dissolve. Add lemon juice, vanilla and sugar. Beat milk very stiff and then beat into jello mixture. Pour mixture over chilled crust. Sprinkle top with dry crumbs.
