Lemon cake



  • sugar - 1 c
  • butter - 1/2 c
  • egg yolks - 8 item
  • sifted powdered sugar - 1 item
  • lemon juice - 1/2 c
  • box yellow cake mix - 1 item
  • box almond butter cookies, crushed - 1 item

How to make lemon cake:

Prepare cake using box directions. Let cool. Combine sugar and lemon juice in saucepan. Add yolks. Cook and stir over medium heat until bubbly. Reduce heat and stir for 2 minutes. Add butter a few pieces at a time. Stir until melted. Transfer to a bowl and cover with plastic wrap. Chill.

Place 1 cake layer on a cake plate. Spread with 1/3 cup lemon mixture. Sprinkle with 2 tablespoons crushed cookies. Repeat with another layer using remaining lemon mixture. Use remaining cookies on top and sides of cake. Sprinkle the top of the cake with powdered sugar.
