Ingredients/Components

  • sugar - 3 c
  • butter or margarine - 1 c
  • salt - 1/8 tsp
  • flour - 3 c
  • egg yolks - 5 item
  • soda - 3/4 tsp
  • buttermilk - 1 c
  • egg whites - 5 item
  • lemon extract - 2 Tbsp

How to make lemon buttermilk cake:

Cream butter and sugar. Add egg yolks, one at a time, beating well after each addition. Add soda to 1/2 cup buttermilk. Add salt to remaining 1/2 cup buttermilk. Add flour and buttermilk mixtures alternately.

Beat egg whites until stiff; gently fold into batter. Pour into greased and floured 9 x 13-inch pan or Bundt pan. Bake at 325° for 60 minutes. Cool and dust with powdered sugar. This cake freezes well.
