- sugar - 3 c
- butter or margarine - 1 c
- salt - 1/8 tsp
- flour - 3 c
- egg yolks - 5 item
- soda - 3/4 tsp
- buttermilk - 1 c
- egg whites - 5 item
- lemon extract - 2 Tbsp
How to make lemon buttermilk cake:
Cream butter and sugar. Add egg yolks, one at a time, beating well after each addition. Add soda to 1/2 cup buttermilk. Add salt to remaining 1/2 cup buttermilk. Add flour and buttermilk mixtures alternately.Beat egg whites until stiff; gently fold into batter. Pour into greased and floured 9 x 13-inch pan or Bundt pan. Bake at 325° for 60 minutes. Cool and dust with powdered sugar. This cake freezes well.
