- sugar - 3/4 c
- eggs - 3 item
- salt - 1/4 tsp
- butter - 4 Tbsp
- lemon juice - 4 Tbsp
- grated lemon rind - 1 item
How to make lemon butter:
To prepare lemon butter, beat eggs until light. Add sugar with lemon juice and grated lemon peel. Combine in a saucepan with butter. Cook, stirring constantly until thickened to a pudding, constantly stirring. Let cool and spread on cake. Serves 8.This butter can be put in a jar and kept in the refrigerator for several days.
