  • sugar - 1 c
  • eggs - 2 item
  • milk - 1/2 c
  • salt - 1/2 tsp
  • chopped nuts - 1/2 c
  • baking powder - 1 tsp
  • all-purpose flour
  • lemon juice - 3 Tbsp
  • fresh or frozen blueberries - 1 c
  • grated lemon peel - 2 Tbsp
  • melted margarine or butter - 1/3 c

How to make lemon blueberry bread:

Glaze:2 Tbsp. lemon juice1/4 c. sugar In a mixing bowl, beat butter, sugar, juice and eggs. Combine flour, baking powder and salt. Stir into egg mixture alternately with milk. Fold in peel, nuts and blueberries. Pour into a greased 8 x 4 x 2-inch loaf pan. Bake at 350° for 60 to 70 minutes or until bread tests done. Cool in pan 10 minutes.

Meanwhile, combine glaze ingredients. Remove bread from pan and drizzle with glaze. Cool on wire rack.
