Lemon blueberry bread
Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- milk - 1/2 c
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- baking powder - 1 tsp
- all-purpose flour
- lemon juice - 3 Tbsp
- fresh or frozen blueberries - 1 c
- grated lemon peel - 2 Tbsp
- melted margarine or butter - 1/3 c
How to make lemon blueberry bread:
Glaze:2 Tbsp. lemon juice1/4 c. sugar In a mixing bowl, beat butter, sugar, juice and eggs. Combine flour, baking powder and salt. Stir into egg mixture alternately with milk. Fold in peel, nuts and blueberries. Pour into a greased 8 x 4 x 2-inch loaf pan. Bake at 350° for 60 to 70 minutes or until bread tests done. Cool in pan 10 minutes.Meanwhile, combine glaze ingredients. Remove bread from pan and drizzle with glaze. Cool on wire rack.
