Lemon bars



  • sugar - 2 c
  • flour - 2 c
  • baking powder - 1/2 tsp
  • powdered sugar - 1/2 c
  • margarine - 1 c
  • lemon juice - 1/3 c
  • Filling:4 eggs, beaten

How to make lemon bars:

Filling:4 eggs, beaten2 c. sugar1/3 c. lemon juice1/4 c. flour1/2 tsp. baking powder Mix crust ingredients as you would for pie dough. Press into a 9 x 13-inch pan. Bake at 350° for 20 minutes.

While crust is baking, mix the filling ingredients together; beat well. Pour over the hot crust and return to the oven. Bake for 25 minutes or until lemon filling seems well set. Remove from oven and cool completely. Sprinkle with powdered sugar before serving. Makes 35 bars.
