Ingredients/Components
- butter
- whipping cream - 1/2 c
- mashed potatoes - 8 c
- flour scant - 4 c
How to make lefse:
Peel potatoes, cook and mash with butter, salt and cream. Let cool. Mix in flour. On lightly floured board, roll out rounds, about 8 to 12-inch diameter, paper thin. Bake on ungreased griddle on moderate heat until lightly brown. Turn once. Takes only about 1 minute per side. To eat, spread with butter and sprinkle with cinnamon and sugar. Roll up and enjoy.To store in freezer, cool between dish towels, fold in fourths with waxed paper between folds; wrap in waxed paper. Will keep up to a month in airtight wrapping.
This is a potato-pancake like bread. Much loved by most Scandinavians.
