Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- vanilla - 1 tsp
- milk - 1/2 c
- butter or margarine - 2 Tbsp
- salt - 1/4 tsp
- brown sugar
- baking powder - 1 tsp
- butter or margarine, melted - 1/2 c
- light cream - 2 Tbsp
- cake flour - 1 c
- coconut, shredded - 1 c
How to make lazy daisy cake:
Frosting:3/4 c. brown sugar1/2 c. butter or margarine, melted2 Tbsp. light cream1 c. coconut, shredded In a large mixing bowl, beat eggs, sugar and vanilla on high until thick and lemon colored (about 4 minutes). Combine flour, baking powder and salt; add to egg mixture. Beat on low until combined.Heat milk and butter in a small saucepan until butter melts; add to batter. Beat thoroughly. (Batter will be thin.) Pour in greased 9-inch square pan. Bake at 350° for 20 to 25 minutes or until done. Cool.
Frosting: Blend all ingredients well. Spread over warm cake. Broil 4-inches from heat for 3 to 4 minutes or until top is brown. Makes 9 servings.
