Layered salad
Ingredients/Components
- pkg - 1 oz
- Minute rice - 1 c
- can red kidney beans, drained - 1 item
- small red onion, thinly sliced - 1 item
- shredded iceberg lettuce
- envelope zesty Italian salad dressing mix - 1 item
How to make layered salad:
Prepare rice as directed on package; cool. Place 1 1/2 cups of lettuce in 2-quart straight-sided bowl. Add half the onions with half the rice. Add a layer of peas. Repeat lettuce, onion and rice layers. Top with kidney beans and add remaining lettuce. Chill. Prepare salad dressing mix as directed on package. About 1 hour before serving, pour evenly over salad and chill. (Be creative with salad dressing mix. Use a flavored vinegar, such as red wine or tarragon.
