  • garlic salt - 1/2 tsp
  • chopped fresh parsley - 1/4 c
  • finely chopped onion - 1/2 c
  • green pepper, chopped - 1 sm
  • torn lettuce - 2 c
  • sweet pickle relish - 1/4 c
  • sweet red pepper, chopped - 1 sm
  • celery seeds - 1/2 tsp
  • chopped cooked chicken, divided - 3 c
  • large tomatoes, seeded and chopped - 2 item
  • thinly sliced cucumber - 1 c
  • Dressing see below - 1 item
  • cooked, long-grain rice - 1 c
  • Red pepper rings - 1 item
  • chicken and lettuce in a 3 qt
  • dillseeds - 1/2 tsp

How to make layered chicken salad:

Layer 1 1/2 c. chicken and lettuce in a 3 qt. bowl. Combine rice, peas, parsley; spoon evenly over lettuce. Layer tomatoes, cucumber, pepper and remaining 1 1/2 c. chicken. Spoon dressing evenly over top of salad, sealing to edge of bowl. Top with pepper rings; cover and chill 8 hours. Toss before serving. Yield: 8 servings.DRESSING:1 c. mayonnaise1/2 c. sour cream1/2 c. raisins1/2 c. finely chopped onion1/4 c. sweet pickle relish2 Tbsp. milk1/2 tsp. celery seeds1/2 tsp. dillseeds1/2 tsp. dry mustard1/2 tsp. garlic salt Combine all ingredients; stir well. Yield: about 2 3/4 c.
