Ingredients/Components
- chopped cooked chicken - 3 c
- torn lettuce - 2 c
- cooked long grain rice - 1 c
- pkg - 1 oz
- chopped fresh parsley - 1/4 c
- large tomatoes, seeded and chopped - 2 item
- thinly sliced cucumber - 1 c
- small sweet red pepper, chopped - 1 item
- small green pepper, chopped - 1 item
- dressing recipe follows - 1 item
- Combine rice, peas and parsley; spread evenly over lettuce
- sour cream - 1/2 c
- raisins - 1/2 c
- finely chopped onion - 1/2 c
- sweet pickle relish - 1/4 c
- milk - 2 Tbsp
- celery seed - 1/2 tsp
- dill seed - 1/2 tsp
- dry mustard - 1/2 tsp
- garlic salt - 1/2 tsp
How to make layered chicken salad:
Layer 1 1/2 cups chicken and lettuce in a 3-quart bowl. Combine rice, peas and parsley; spread evenly over lettuce. Layer tomatoes, cucumber, chopped red pepper, green pepper and remaining 1 1/2 cups chicken. Spoon dressing evenly over top of salad, sealing to edge of bowl. Chill 8 hours.
