Ingredients/Components

  • salt
  • eggs, beaten - 2 item
  • low-fat cottage cheese - 3 c
  • chopped onion - 3/4 c
  • parsley flakes - 1 Tbsp
  • ground beef - 1 lb
  • Mozzarella cheese, shredded - 3/4 lb
  • oregano - 1 tsp
  • basil - 2 tsp
  • tomato paste
  • Parmesan cheese, grated - 1/2 c
  • can tomatoes - 1 oz
  • clove garlic, peeled and crushed - 1 item
  • lasagne noodles - 8 oz

How to make lasagne:

Brown beef with onion and garlic. Drain. Add tomatoes, tomato paste, basil, oregano and salt. Simmer uncovered 30 minutes, stirring occasionally. Preheat oven to 350°. Cook lasagne noodles according to package instructions. Mix cottage cheese, parsley, eggs and Mozzarella cheese.

In 9 x 13-inch pan, layer half the noodles, cottage cheese mixture and meat sauce. Repeat layers with remaining ingredients. Sprinkle with Parmesan cheese. Bake 45 minutes. Let stand 10 minutes before serving.
