Ingredients/Components

  • lean ground beef - 3/4 lb
  • finely chopped, peeled onion - 3/4 c
  • minced, peeled garlic - 1/2 tsp
  • can tomato sauce - 1 oz
  • can tomato paste - 1 oz
  • salt - 1 tsp
  • black pepper - 1/4 tsp
  • oregano leaves - 1/2 tsp
  • part skim Mozzarella cheese, grated or chopped - 8 oz
  • small curd cottage cheese - 1 lb
  • pkg - 2 oz
  • lasagna noodles 6 noodles, cooked according to pkg - 4 oz

How to make lasagna:

In a large skillet, brown meat over moderate heat, stirring with a spoon to break up. Using a slotted spoon, remove meat to a bowl or plate. Pour off all but 1 teaspoon fat from the skillet. Add onion and garlic; cook 3 to 4 minutes, stirring frequently, until softened.

Skin garlic and cook 3 to 4 minutes, stirring frequently until softened. Stir in tomato sauce, tomato paste, salt, pepper and oregano. Mix in browned meat. Turn heat to low and simmer for about 15 minutes. Heat oven to 350°.

Place 3 of the noodles in an 11 3/4 x 7 1/2 x 3/4-inch baking dish. Top with layers of about 1/3 each of the tomato sauce, Mozzarella cheese and cottage cheese. Spread spinach evenly over cheese.

Top cheese with remaining noodles and then with remaining 1/3 of tomato sauce, Mozzarella and cottage cheese. Bake 30 minutes, until cheese is bubbly. Cut in squares to serve. Makes 6 to 8 servings.

For diet serving, allow 1/8 of the lasagna.
