Ingredients/Components

  • salt - 1 tsp
  • water - 1 item
  • onion, chopped - 1 item
  • garlic cloves, minced - 2 item
  • barley - 1 c
  • cayenne pepper - 1/4 tsp
  • thyme - 1/2 tsp
  • green beans - 1 c
  • potato cubes - 1 c
  • carrots, pared and diced - 4 item
  • leg of lamb bone - 1 item
  • yellow summer squash, diced - 1 item
  • orzo Greek macaroni product - 1/2 c

How to make lamb and barley soup:

Place bone, water to cover, thyme, salt and garlic in a stock pot. Bring to a boil and then simmer 1 hour. Add onion, barley, carrots, beans, squash, potatoes and cayenne pepper. Continue to simmer until vegetables are just tender, about 30 minutes. Add orzo and cook another 10 to 12 minutes. Makes a big pot of flavorful soup.
