  • Add sifted dry ingredients alternatively with milk and water; beat smooth after each addition

How to make lady baltimore cake:

Cream shortening and sugar thoroughly. Add sifted dry ingredients alternatively with milk and water; beat smooth after each addition. Add extracts. Fold in egg whites. Bake in 2 waxed paper lined pans, 9 inch square layer pans in moderate over (350 degrees) for 30 minutes. Put layers together with 2/3 of the recipe for Seven Minute Frosting tinted a delicate pink.

Lady Baltimore Filling: To remaining 1/3 of Seven Minute Frosting add 1/4 cup each figs, seeded raisins, candied cherries and chopped pecans.Seven Minute Frosting:2 egg whites1 1/2 cups sugar1 1/2 tsp. light corn syrup or 1/4 tsp. cream of tartar1/3 cup cold water dash of salt1 tsp. vanilla extract Place all ingredients except vanilla in double boiler. Mix thoroughly. Cook beating constantly with rotary or electric beater until mixture forms peaks, about 7 minutes. Remove from heat; add vanilla. Beat until of spreading consistency.
