Ingredients/Components
- sugar - 1/2 c
- milk - 1 c
- butter or margarine - 2/3 c
- salt - 1 tsp
- water - 1/4 c
- grated lemon peel
- dry yeast - 2 pkg
- flour, divided - 3 to
- eggs room temperature - 4 item
- raisins golden - 3/4 c
- bread crumbs or ground almonds - 2 3
How to make kugelhopf:
In a large mixing bowl, mix well 2 cups flour, sugar, yeast and salt. Heat milk, raisins, butter and water to 120° to 130°. Butter need not melt. Add to flour mixture. Beat at medium speed 3 minutes or until smooth. Beat in eggs. Stir in lemon peel and 1 1/2 cups flour or enough to make a thick batter. Cover in warm place. Let rise 1 hour or until doubled.In two greased tube pans, sprinkle with bread crumbs; arrange blanched almonds in bottom. When batter has doubled, stir down. Carefully spoon batter to half fill molds. Let rise 45 minutes. Bake at 350° for 35 to 40 minutes. Cover after 15 minutes.
