Ingredients/Components

  • egg whites - 4 item
  • cup water - 1/4 item
  • cup lime juice - 1/2 item
  • cup sugar - 1/2 item
  • teaspoon salt - 1/4 item
  • eggs yolks - 4 item
  • tablespoon unflavored gelatin - 1 item
  • teaspoon grated lime peel - 1 item
  • few drops green food coloring - 1 item
  • cup cream or dream whip[ - 1 item
  • - 9 inch baked pastry shell or graham cracker crust - 1 item

How to make key lime pie:

Thoroughly mix gelatin, 1/2 cup sugar, and salt in a saucepan. Beat together egg yolks, lime juice and water; stir into gelatin mixture. Cook and stir over medium heat just till mixture comes to boiling. Remove from heat; stir in grated peel. Add food coloring sparingly to tint pale green. Chill, stirring occasionally until mixture mounds slightly when dropped from a spoon. Beat egg whites till soft peaks form: gradually add 1/2 cup sugar, beating to stiff peaks. Fold gelatin mixture into egg whites. Fold in whipped cream. Pile into cooled pastry shell, chill till firm. Spread with more whipped cream, edge with grated pistachio nuts.
