Kansas corn scallop
Ingredients/Components
- eggs - 2 item
- salt - 1/2 tsp
- pepper - 1/4 tsp
- instant minced onion - 2 Tbsp
- can cream-style corn - 1 oz
- can whole kernel corn - 1 to
- Swiss cheese, diced - 12 oz
- butter, melted 1/2 stick - 4 Tbsp
- coarsely crushed saltines - 2 c
How to make kansas corn scallop:
Preheat oven to 325°. Drain liquid from whole kernel corn into a cup. Beat eggs slightly in a large bowl; stir in corn, 1/4 cup of the liquid, cream-style corn, evaporated milk, melted butter, onion, salt and pepper; fold in saltines and diced cheese. Spoon into a greased 8-cup baking dish. Bake for 1 hour or until set. Let stand 5 minutes before serving. Makes 6 servings.Recipe categories: Side dish, Vegetables, Corn.
