Jumbo molasses cookies
Ingredients/Components
- sugar - 1 c
- eggs - 3 item
- salt - 1/4 tsp
- flour - 4 c
- baking soda - 1 tsp
- cider vinegar - 1/4 c
- ground cinnamon - 2 tsp
- ground ginger - 1 tsp
- shortening part Crisco and part butter - 1/2 c
- dark or light molasses - 1 c
How to make jumbo molasses cookies:
Beat eggs; add sugar, shortening, salt, molasses and vinegar. Mixture may look curdled, but add gradually the dry ingredients and spices. Beat until smooth. Refrigerate for about an hour. On lightly greased cookie sheets, drop by tablespoon, three inches apart. Bake 10 to 12 minutes or until set. Cool. Makes about 3 1/2 dozen.
