Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour - 2 Tbsp
- water
- nutmeg - 1 tsp
- soda - 1 tsp
- buttermilk - 1 c
- raisins - 1 c
- margarine - 1 c
- cloves - 1 tsp
- allspice - 1 tsp
- sifted plain flour - 3 c
- small can crushed pineapple - 1 item
- juice from 2 lemons
- mixed fruit - 1 lb
- lemon rinds, grated - 2 item
- small cans cherries - 2 item
- Cream margarine and sugar together
How to make japanese fruit cake:
Mix the mixed fruit, cherries, pineapple, raisins and nuts; set aside. Cream margarine and sugar together. Add eggs, one at a time, beating well after each addition. Sift all dry ingredients together. Combine with fruit mixture. Add to batter; mix well. Pour in 3 (8-inch) cake pans. Bake at 350° until sides leave pan.Japanese Fruit Cake Frosting:2 boxes coconut2 1/2 c. sugar2 Tbsp. flour2 lemon rinds, grated juice from 2 lemons1 1/2 c. water Cook until thickened.
