Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 4 item
- vanilla - 1 tsp
- milk - 1 c
- flour
- butter - 1 c
- cornstarch - 3 Tbsp
- baking powder - 3 tsp
- pinch of salt - 1 item
- raisins - 1/2 c
- lemon juice - 1/4 c
- cloves - 1/2 tsp
- allspice - 1 tsp
- lemon rind - 1 tsp
- chopped raisins - 3/4 c
- fresh coconut - 3 c
- Add eggs one at a time, beating well
- water and coconut milk
How to make japanese fruit cake:
Cream butter and sugar. Add eggs one at a time, beating well. Sift flour and baking powder. Add to butter, milk and vanilla. Roll raisins in remaining flour. Divide batter in half. Add raisins and spices to two layers and leave two layers plain. Bake at 350° for 25 to 30 minutes.Japanese Fruit Cake Filling:1/2 c. pecans1/2 c. raisins2 c. sugar3 Tbsp. cornstarch pinch of salt3 c. fresh coconut1 1/2 c. water and coconut milk1/4 c. lemon juice1 tsp. lemon rind Combine sugar, cornstarch, salt, coconut, water and coconut milk.
