Japanese fruit cake



  • sugar
  • cinnamon - 1/2 tsp
  • eggs - 3 item
  • vanilla
  • milk - 1 c
  • butter - 1 Tbsp
  • cornstarch - 3 Tbsp
  • self-rising flour - 2 c
  • Crisco - 1/2 c
  • lemon juice - 1 Tbsp
  • small can crushed pineapple - 1 item
  • nut meats optional - 1/3 c
  • Add Crisco, milk and vanilla

How to make japanese fruit cake:

Sift flour and sugar. Add Crisco, milk and vanilla. Beat 2 minutes, then add eggs. Beat well. Pour 1/3 of batter into layer pan. Then, stir in nut meats and spices into rest of batter. Make 2 layers out of this batter. Bake at 350° for 25 to 30 minutes. When layers are cool, spread filling between layers.Filling:1/8 tsp. salt1/2 c. sugar3 Tbsp. cornstarch1 small can crushed pineapple1 Tbsp. butter1 Tbsp. lemon juice Mix all ingredients and cook in double boiler until thick. Cool. Then spread tops and sides of cake with Seven Minute Frosting. Sprinkle coconut over all of cake.
