  • sugar - 2 c
  • flour
  • milk
  • eggs - 4 item
  • baking powder - 1 tsp
  • vanilla - 1 tsp
  • each: cinnamon and allspice cloves optional - 1 tsp
  • raisins, chopped fine - 1/4 lb
  • nuts, chopped fine
  • Divide batter into 2 parts
  • grated rind of 1 lemon
  • pkg - 1 coconut,
  • sugar if using coconut 1 1/2 c - 2 c
  • boiling water - 1 c
  • cornstarch - 2 Tbsp
  • small jar cherries, chopped fine - 1 item

How to make japanese fruit cake:

Mix first 7 ingredients and make as any other cake. Divide batter into 2 parts. Into 1 part, put 1 teaspoon each of cinnamon and allspice, raisins and nuts. Bake this part and other part in 2 layers each at 350° for 15 to 25 minutes.Filling and Ici
