Ingredients/Components
- sugar - 2 c
- eggs - 4 item
- milk - 1 c
- chopped nuts - 1 c
- flour - 4 c
- cornstarch - 4 Tbsp
- coconut - 1 item
- baking powder - 1 Tbsp
- boiling water - 1 c
- shortening - 1 c
- white raisins - 1/2 lb
- Add eggs, beating well
- each: cloves, nutmeg and cinnamon - 1 Tbsp
- each: cherries, pineapple and citron - 1/4 lb
How to make japanese fruit cake:
Cream the sugar and shortening. Add eggs, beating well. Sift flour, baking powder and spices together. Add to the other mixture alternately with milk. Blend. Add fruits and nuts which have been lightly floured. Bake at 350° for 45 minutes.Filling: grated rind and juice from 2 oranges and 2 lemons1 coconut1 c. boiling water4 Tbsp. cornstarch2 c. sugar Mix all ingredients except cornstarch; bring to boil over medium heat.
