Ingredients/Components

  • salt - 2 tsp
  • flour - 1 Tbsp
  • water
  • shortening - 1 Tbsp
  • clove garlic, minced - 1 item
  • chopped onion - 1 c
  • chopped green pepper - 1 c
  • chopped parsley - 2 Tbsp
  • rice - 2 c
  • cayenne pepper - 1/4 tsp
  • can whole tomatoes - 1 oz
  • thyme - 1/2 tsp
  • Worcestershire - 2 Tbsp
  • shrimp - 1 lb
  • ham - 1 lb

How to make jambalaya:

In large skillet, cook ham 5 minutes. Drain off all but 2 tablespoons fat. Add pepper, onion and garlic. Cook until tender. Blend in flour and brown slowly stirring often. Stir in tomatoes, water and parsley. Bring to a boil and add rice, Worcestershire, salt, thyme and pepper. Return to boil. Reduce and simmer covered 20 minutes. Add shrimp and cook 10 minutes longer.
