• sugar - 1/8 tsp
  • margarine - 2 Tbsp
  • cloves garlic, minced - 2 item
  • chili powder - 1 tsp
  • chicken broth
  • parsley - 1 Tbsp
  • green pepper, chopped - 1 item
  • large onion, chopped - 1 item
  • cooked chicken, diced - 1 lb
  • thyme - 1/2 tsp
  • red pepper, chopped - 1 item
  • hot red pepper - 1/4 tsp
  • long grain white rice - 1 c
  • can tomatoes, chopped - 16 oz
  • smoked ham, diced - 6 oz
  • spicy smoked sausage - 1/2 lb

How to make jambalaya:

Saute sausages in greased Dutch oven over medium heat until well browned. Transfer to plate. Discard drippings from pot. Add margarine; heat. Add onion. Cook over medium-low heat 2 minutes. Add garlic. Cook 3 minutes. Add green and red pepper, tomatoes (drained), thyme, chili powder, ground red pepper and sugar. Cook, covered, over low heat for 15 minutes.

Cut sausages into slices. Add to pot along with rice and ham, stirring to coat. Add broth. Bring to boil, then simmer, covered, until rice is tender, about 30 minutes. Stir in shrimp; cook, covered, until shrimp turns pink, about 5 minutes. (Uncover if mixture is too wet and stir over low heat to evaporate excess liquid.) Add parsley. Serve. Makes 6 servings.
