  • vegetable oil - 3 Tbsp
  • allspice - 2 tsp
  • salt and pepper - 1 item
  • chicken - 3 lb
  • thyme - 1/2 tsp
  • diced potatoes - 1 c
  • garlic - 2 tsp
  • onions - 1 c
  • curry - 3 Tbsp

How to make jamaican curry chicken:

Cut chicken in small pieces (eg. thigh in two). Mix all ingredients. Heat oil in a large deep pot. Cook on high heat for 5 minutes, stirring occasionally. Reduce heat to medium and simmer, covered, for about an hour, stirring occasionally. Serve over hot rice.
