  • sugar - 1 c
  • buttermilk - 2/3 c
  • baking soda - 1 tsp
  • all-purpose flour
  • large eggs - 3 item
  • can crushed pineapple - 1 oz
  • chopped walnuts - 1 c
  • ground cloves - 1/2 tsp
  • ground cinnamon - 1 tsp
  • ground nutmeg - 1 tsp
  • solid vegetable shortening - 1/2 c
  • butter, at room temperature - 1/2 c
  • dark seedless raisins - 1 c
  • raspberry or blackberry jam - 1 c

How to make jam cake:

Soak raisins at least 2 hours in crushed pineapple with juice. Butter 2 (8-inch) round cake pans. Line cake pans with waxed paper. Heat oven to 350°.

In a bowl, combine dry ingredients, except sugar and mix well (set aside). In large bowl, beat shortening and butter until fluffy, then beat in sugar. Beat in eggs. Stir in pineapple, raisins, jam and nuts. Stir in dry ingredients, about 1/3 at a time, alternating with buttermilk and beating after each addition until well mixed.

Pour into pans. Bake 45 minutes or until cake tester comes out clean. Cake will still appear moist and spongy. Turn out on wire racks to cool. Cake may be baked in 13 x 9 x 2-inch pan. Frost with caramel frosting or leave uniced.
