Ingredients/Components

  • sugar - 1 c
  • cinnamon - 1 tsp
  • vanilla - 1/2 tsp
  • butter or margarine - 1/2 c
  • flour
  • water - 1/2 c
  • nutmeg - 1 tsp
  • coconut - 1 c
  • buttermilk - 1/2 c
  • eggs, beaten - 3 item
  • baking soda - 3/4 tsp
  • nuts - 1 c
  • butter or oleo - 1/4 c
  • box raisins - 1/2 item
  • pecans or walnuts - 1 c
  • blackberry jam - 1 c
  • Grind raisins, nuts and coconut in food processor

How to make jam cake:

Grease and flour bottoms of three 8-inch pans. Grind raisins, nuts and coconut in food processor. Cream butter and sugar together; add vanilla. Beat eggs and buttermilk. Sift together flour, baking soda, nutmeg and cinnamon. Mix together with egg mixture. Then fold in jam, raisins, nuts and coconut. Pour into pans and bake 30 minutes or pick comes out clean. Bake at 350°.Frosting for Jam Cake:2 egg whites1/2 c. water1/4 c. butter or oleo3/4 c. sugar1/2 box raisins1 c. coconut1 c. nuts Mix water, sugar and butter together in top of double boiler and cook until thick, about 7 minutes. Remove from heat. Beat in egg whites and then rest of ingredients. Frost between layers and sides of cake and top with pecan halves.
