Ingredients/Components

  • sugar - 2 c
  • vanilla - 1 tsp
  • flour - 3 c
  • butter - 1 c
  • water - 1/2 c
  • egg yolks - 8 item
  • baking powder
  • corn syrup - 1/2 c
  • jam - 1 c
  • juice - 1 c
  • or 4 egg whites - 3 item
  • each: cloves, cinnamon and mace - 1 tsp
  • Beat eggs and sugar together until light

How to make jam cake:

Sift baking powder in flour. Beat eggs and sugar together until light. Add butter (well creamed), then the flour, spices, jam and, lastly, the juice. Bake in layer pans. Put together with icing. This makes a fine substitute for fruit cake.

Remarks: Juice could be blackberry juice if blackberry jam is used. Bake in greased and floured 9-inch cake pans at 350° for 40 to 45 minutes.Icing:2 1/2 c. sugar1/2 c. corn syrup1/2 c. water3 or 4 egg whites1 tsp. vanilla A boiled icing, using some of the egg whites, would be good. Mix the sugar with corn syrup and water. Boil until it can make a string. Beat the egg whites until stiff and, while beating, slowly add the boiling mixture. When stiff, add the vanilla.
