Jam cake
Ingredients/Components
- shortening - 1/2 c
- sugar - 1 c
- eggs - 2 item
- all-purpose flour - 2 c
- soda - 1 tsp
- cinnamon
- ground cloves - 1/2 tsp
- nutmeg - 1/2 tsp
- sour milk - 1 c
- berries - 3/4 c
How to make jam cake:
Cream shortening and sugar; add eggs and beat well. Sift together remaining ingredients. Add sour milk alternately with flour mixture, beating after each addition. Gently fold in berries. Pour into 2 (9-inch) round cake pans that have been prepared with wax paper on the bottom of pans and greased and floured around sides. Bake in 350° oven for 20 minutes or until done.Frost with caramel icing, prepared with 1 1/2 cups brown sugar; dampen with little milk and cook 5 minutes. Cool and add 2 cups powdered sugar and beat well.
This recipe is one that my mother, Florence Redman, baked often in the 1940's.
