  • salt - 1 tsp
  • baking powder - 2 tsp
  • vegetable oil - 1/4 c
  • ground beef - 1 lb
  • eggs, slightly beaten - 2 item
  • large onion, chopped - 1 item
  • to 4 jalapeno peppers, finely chopped - 2 item
  • cream corn - 1 (17
  • and 8 oz - 2 c

How to make jalapeno cornbread:

Combine eggs, baking powder, salt, corn, milk and vegetable oil in a bowl and set aside. Pour 1/2 cornmeal mixture into a greased 10 1/2-inch cast-iron skillet. Sprinkle evenly with beef; top with cheese, onion and peppers. Pour remaining batter over top. Bake at 350° for 45 to 50 minutes. Let stand 5 minutes before serving. Makes 6 to 8 servings.
