Jalapeno chicken casserole
Ingredients/Components
- sour cream - 1 pt
- butter - 2 Tbsp
- chopped onions - 1/2 1
- salt optional - 1/2 tsp
- frozen spinach - 1 pkg
- chopped, cooked chicken - 4 6
- cans cream of chicken soup - 2 item
- grated Monterey Jack cheese - 2 c
- green onion tops - 4 item
- Doritos do not crush
- to 6 jalapeno peppers, sliced - 3 item
How to make jalapeno chicken casserole:
Saute onions in butter. Blend spinach that has been cooked and drained well. Add jalapenos, sour cream, soup and onion tops. In a large Pyrex pan, alternate layers of Doritos, sauteed mixture and cheese; top layer to be cheese. Bake at 350° for 30 minutes or until bubbly.This can be very hot if you use too many jalapenos, but then you forget that you are eating spinach!
