Ingredients/Components

  • zucchini, thinly sliced - 4 c
  • onion, chopped - 1 c
  • butter - 1/4 c
  • fresh parsley or 2 Tbsp - 1/2 c
  • salt - 1/2 tsp
  • pepper - 1/2 tsp
  • garlic powder - 1/4 tsp
  • garlic clove, crushed - 1 item
  • basil - 1/4 tsp
  • oregano - 1/4 tsp
  • eggs, beaten - 2 item
  • shredded cheese Muenster, Swiss or Mozzarella - 8 oz
  • cans crescent rolls - 1 2
  • mustard - 2 tsp

How to make italian zucchini pie:

Combine zucchini, onions and butter; simmer for 10 minutes. Add spices to zucchini. Combine eggs and cheese; add to zucchini. Press rolls into 9 x 13-inch pan. Spread with mustard. Pour zucchini mixture over rolls. Bake at 370° for 18 to 20 minutes. Cover with foil the last 10 minutes.
