Ingredients/Components

  • eggs, well beaten - 2 item
  • pepper - 1/2 tsp
  • chopped onion - 1 c
  • mustard - 2 tsp
  • crescent rolls - 1 count)
  • diet margarine - 1/2 c
  • shredded zucchini - 4 c
  • shredded low-fat skim Mozzarella cheese - 2 c

How to make italian zucchini casserole:

Saute zucchini with onion and margarine in skillet for 10 minutes. Add pepper; mix well. Mix eggs and cheese in bowl. Stir in zucchini mixture. Line 10-inch pie plate or casserole dish with crescent roll dough, pressing edges to seal. Spread with mustard. Spoon zucchini mixture into crust. Bake at 375° for 18 to 20 minutes or until knife inserted in center comes out clean. Yields 8 servings.
