  • salt - 1 tsp
  • water - 2 c
  • pepper - 1/4 tsp
  • diced onion - 1 c
  • ground beef - 1 lb
  • oregano - 1/2 tsp
  • tomato sauce - 1 can
  • shredded cabbage - 2 c
  • sliced carrots - 1 c
  • sliced celery - 1 c
  • dried parsley - 1 Tbsp
  • tomatoes - 1 can
  • sweet basil - 1/2 tsp
  • green beans - 1 c
  • beef bouillon granules - 5 Tbsp
  • small elbow macaroni - 1/2 c
  • minced garlic to taste - 1 item
  • red kidney beans, undrained - 1 can

How to make italian vegetable soup:

Brown beef in large heavy kettle. Drain. Add all ingredients except cabbage, beans and macaroni. Bring to boil. Lower heat, cover and simmer 30 minutes. Add remaining ingredients. Simmer until vegetables are tender. Add more water or broth if needed.
