Italian sausage casserole



  • medium red potatoes, unpeeled and quartered - 8 item
  • celery, cut up - 3 c
  • medium onions, coarsely chopped - 2 item
  • large green pepper, coarsely chopped - 1 item
  • medium eggplant, peeled and cubed - 1 item
  • large can pitted black olives, drained - 1 item
  • Italian sausage, cut in pieces
  • large can mushrooms, drained - 1 item
  • olive oil - 1/4 c
  • Italian seasoning - 2 tsp
  • garlic powder to taste - 1 item

How to make italian sausage casserole:

Brown sausage and cut into 1-inch pieces. Set aside. Place all vegetables and spices in a large bowl, mixing in olive oil gently. Mix sausage and vegetables together and place in large glass baking dish. Cover tightly with foil and bake at 400° for 1 1/2 hours. Top with Parmesan cheese to serve. Makes 6 large servings.
