Italian sausage casserole
Ingredients/Components
- medium red potatoes, unpeeled and quartered - 8 item
- celery, cut up - 3 c
- medium onions, coarsely chopped - 2 item
- large green pepper, coarsely chopped - 1 item
- medium eggplant, peeled and cubed - 1 item
- large can pitted black olives, drained - 1 item
- Italian sausage, cut in pieces
- large can mushrooms, drained - 1 item
- olive oil - 1/4 c
- Italian seasoning - 2 tsp
- garlic powder to taste - 1 item
How to make italian sausage casserole:
Brown sausage and cut into 1-inch pieces. Set aside. Place all vegetables and spices in a large bowl, mixing in olive oil gently. Mix sausage and vegetables together and place in large glass baking dish. Cover tightly with foil and bake at 400° for 1 1/2 hours. Top with Parmesan cheese to serve.
