Italian sausage and tortellini soup
Ingredients/Components
- can tomato sauce
- dried oregano - 2 T
- garlic cloves, minced - 2 lg
- dried basil - 2 T
- cup chopped onion - 1 item
- sweet Italian sausage, casings removed - 1 lb
- cups beef stock or canned brother - 5 item
- cups chopped tomatoes - 2 item
- large zucchini, sliced - 1 item
- large carrot, sliced - 1 item
- medium size green bell pepper, diced - 1 item
- cup dry red wine - 1/2 item
- purchased fresh cheese tortellini - 8 10
- Freshly grated Parmesan cheese - 1 item
How to make italian sausage and tortellini soup:
Saut?© sausage in heavy Dutch onion over medium-high heat until cooked through. Using slotted spoon, transfer to large bowl. Pour off all but 1 Tbsp. drippings. Add onion and garlic and saut?© until translucent. Return sausage to pan. Add stock, tomatoes, tomato sauce, zucchini, carrot, bell pepper, wine, basil and oregano. Simmer until vegetables are tender, about 40 minutes.Add tortellini to soup and cook until tender, abut 8 minutes. Season soup to taste with salt and pepper. Ladle soup into bowls. Sprinkle with Parmesan and serve.
