  • sugar - 2 c
  • cream cheese
  • vanilla - 1 Tbsp
  • salt - 1/2 tsp
  • flour - 2 c
  • stick margarine - 1 item
  • eggs, separated - 5 item
  • coconut - 2 c
  • soda - 1 tsp
  • buttermilk - 1 c
  • powdered sugar
  • Crisco - 1/2 c
  • pecans - 1 c

How to make italian cream cake:

Icing:11 oz. cream cheese1 1/2 Tbsp. vanilla3/4 stick margarine1 1/2 c. powdered sugar Beat the egg whites and set aside. Cream together the sugar, margarine, Crisco and vanilla. Add the egg yolks, one at a time. Sift together the flour, soda and salt. Add alternately with buttermilk to the creamed mixture. Add the coconut and pecans. Fold in the egg whites. Pour into three 8-inch layers in well-greased and floured pans. Bake at 350° for 25 minutes.

Icing: Mix all ingredients together and spread on cake.
