  • vanilla - 1 Tbsp
  • chopped pecans - 2 c
  • salt - 1/2 tsp
  • stick margarine - 1 item
  • eggs, separated - 5 item
  • coconut - 2 c
  • soda - 1 tsp
  • buttermilk - 1 c
  • shortening - 1 c
  • stick butter - 1 item
  • box confectioners sugar - 1 item
  • white sugar - 2 c
  • sifted plain flour - 2 c
  • Add butter and beat until fluffy

How to make italian cream cake:

Cream sugar and shortening together well. Add butter and beat until fluffy. Add egg yolks, one at a time, beating after each. Add vanilla and buttermilk alternately with flour, soda and salt, which have been sifted together. Mix well. Add coconut and pecans. Fold in beaten egg whites. Pour into 3 greased and floured layer cake pans. Bake at 350° for 30 minutes. Cool and frost with Cream Cheese Frosting.Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese1 box confectioners sugar1 tsp. vanilla1 stick margarine Soften cheese and margarine. Combine with vanilla and sugar. Beat until fluffy.
