  • pepper - 1/4 tsp
  • grated Parmesan cheese - 1 item
  • can chicken broth - 14 oz
  • can stewed tomatoes - 16 oz
  • medium onion, diced - 1 item
  • olive oil - 1 Tbsp
  • dried basil - 1/2 tsp
  • medium carrots, sliced - 2 item
  • medium zucchini, diced - 1 item
  • cans white kidney beans - 2 oz
  • bunch spinach, chopped - 1/2 item
  • medium celery stalks, diced - 2 item

How to make italian bean soup:

In 5-quart Dutch oven over medium-high heat in oil, saute celery, carrots, onion, zucchini and pepper until vegetables are tender and begin to brown, about 15 minutes. Stir in stewed tomatoes, chicken broth, chopped spinach, white beans and 2 cups water. Over high heat, heat to boiling. Reduce heat to low. Cover and simmer 15 minutes. Spoon soup into large soup bowls. Sprinkle with grated Parmesan cheese.
