Individual cheesecake cups
Ingredients/Components
- eggs - 3 item
- c sugar - 3/4 item
- tsp vanilla extract - 1 item
- c margarine or butter, melted - 1/4 item
- Cheese Filling:2 pkg 8 oz cream cheese, softened
- Topping:1 1/2 c dairy sour cream
- can 21 oz cherry pie filling optional - 1 item
How to make individual cheesecake cups:
Cheese Filling:2 pkg 8 oz cream cheese, softened3 eggs3/4 c sugar1 tsp vanilla extract Topping:1 1/2 c dairy sour cream1/4 c sugar1 can 21 oz cherry pie filling (optional) Preheat oven to 350°. Place 2 1/2 inch foil or paper liners in 24 muffin cups.For crust, combine cake mix and melted 1/4 c margarine in large bowl. Beat at low speed with electric mixer for 1 minute. Mixture will be crumbly. Divide mixture evenly among muffin cups. Level but do no press.
For filling, combine cream cheese, eggs, 3/4 cup sugar and vanilla extract in medium bowl. Beat at medium speed with electric mixer until smooth. Spoon evenly into muffin cups. Bake at 350° for 20 minutes or until set.
For topping, combine sour cream and 1/4 c sugar in small bowl. Spoon evenly over cheesecakes. Return to oven for 5 minutes. Cool completely. Garnish each cheesecake with cherry pie filling, if desired. Refrigerate until ready to serve. Makes 24 servings.
Tip: To melt 1/4 c (1/2 stick) of margarine or butter, place it in a microwave measuring cup or bowl. Heat at HIGH 50 to 60 seconds.
