- eggs - 3 item
- milk
- salt - 3/4 tsp
- pepper - 1/4 tsp
- chopped onion - 2/3 c
- buttermilk baking mix - 3/4 c
- frozen, chopped broccoli 10 oz - 2 pkg
- shredded cheese 12 oz - 3 c
How to make impossible broccoli pie:
Preheat oven to 400°. Grease pie plate, 10 x 1 1/2 inches. Rinse broccoli under cold water to thaw. Drain thoroughly. Then mix broccoli, 2 cups cheese and onion in the plate. Then beat milk, eggs, baking mix, salt and pepper until smooth for 15 seconds in the blender, or on High for 1 minute with hand mixer. Bake until knife inserted in center comes out clean for 25 to 30 minutes. Top with remaining cheese. Bake just until cheese melts, 1 to 2 minutes. Let stand for 5 minutes.
