  • sifted cake flour - 3 c
  • lime juice - 1/2 c
  • whole eggs - 6 item
  • mace - 1/2 tsp
  • baked 9-inch pie shell - 1 item
  • freshly grated nutmeg - 1/2 tsp
  • box confectioners sugar 3 1/2 c - 1 lb
  • gelatin, dissolved in 1/2 c - 1 Tbsp
  • Imperial margarine low cholesterol okay - 1 lb
  • stoneground yellow cornmeal - 1/2 c

How to make imperial pound cake:

Scald 3 cups of milk in top of double boiler. Mix 1 cup cold milk with cornmeal; pour cornmeal mixture slowly into hot milk. Place mixture over boiling water and cook 20 minutes, stirring occasionally. Add sugar, butter and molasses and remove from heat. Add salt and spices; stir in beaten eggs and pour into well buttered 1 1/2-quart shallow baking dish. Bake in preheated 300° oven for 2 to 2 1/2 hours, stirring every 15 minutes during first hour. After first hour, pour cream over top of pudding and continue to bake without stirring in cream. Serve warm, topped with whipped cream or vanilla ice cream.

Directions for Microwave: Note: Decrease milk to 3 cups and salt to 1/2 teaspoon.

Place 2 cups of milk in 2-quart casserole; cook on High for 3 to 4 minutes or until scalded. Mix 1 cup cold milk with cornmeal; pour cornmeal mixture slowly into hot milk. Cook on High 4 minutes or until mixture just comes to a rolling boil. Complete recipe preparation for pudding, except pour into a covered 2-quart round casserole. Cook on High 14 minutes, stirring well every 3 minutes until smooth and thick. Uncover casserole and pour heavy cream over top of pudding without sitting in. Cook, uncovered, for 14 minutes on Medium (50%), rotating dish 1/4 turn halfway through. Let stand on rack for 10 minutes before serving.

To reheat, in microwave oven, 1 cup on Medium-high (70%) for 1 to 2 minutes, 2 cups on 70% for 2 to 3 minutes, 3 cups on 70% for 3 to 4 minutes and 4 cups on 70% for 4 t
