Ingredients/Components

  • sugar - 2 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • milk - 1 c
  • cocoa - 1/4 c
  • baking soda - 1 tsp
  • all-purpose flour - 2 c
  • margarine, softened - 1 c
  • nuts, chopped - 1 c
  • cold mashed potatoes - 1 c

How to make idaho potato cake:

In mixing bowl, cream margarine and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Blend in potatoes and vanilla. Combine flour, cocoa and baking soda; add alternately with milk, blending well after each addition. Stir in nuts. Pour into greased 13 x 9 x 2-inch pan. Bake at 350° for 40 to 45 minutes or until cake tests done. Cool on wire rack. Yield: 12 to 16 servings.
