Ingredients/Components
- sugar - 1/2 c
- salt - 1 Tbsp
- shortening - 3/4 c
- eggs, lightly beaten - 2 item
- hot water - 2 c
- dry yeast - 2 pkg
- lukewarm water - 1/2 c
- all-purpose flour or bread flour - 6 8
How to make icebox rolls:
Mix together hot water, shortening and sugar. Set aside to cool. Dissolve yeast and teaspoon sugar in lukewarm water. Add yeast mixture to first water mixture; add lightly beaten eggs and salt, then the flour 1 or 2 cups at a time. When thoroughly mixed, cover tightly and place in refrigerator overnight. Remove dough from refrigerator; punch down and knead a few times.Shape rolls; place in a greased baking pan. Allow rolls to rise to double in bulk. Bake in 400° oven 12 to 15 minutes, until desired brownness.
For cloverleaf rolls, use well-greased muffin tin. Put 3 pieces of dough in each cup and let rise and bake. Brush tops with melted butter while still warm.
For variety, use 1 or 2 cups whole-wheat flour instead of all white flour; gives a nutty taste to your bread.
